Ingredients

For the BBQ Salmon:

2 salmon fillets (6 oz each)

1/4 cup BBQ sauce (choose your favorite)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

For the Sweet Potato Wedges:

2 medium sweet potatoes, cut into wedges

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Optional: pinch of cayenne pepper for added heat

Instructions

Prep the Sweet Potatoes:

    - Preheat the air fryer to 400°F (200°C).

      - In a large bowl, toss the sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, pepper, and cayenne pepper (if using) until well coated.

        Air Fry the Sweet Potatoes:

          - Place the seasoned sweet potato wedges in the air fryer basket in a single layer.

            - Cook for 12-15 minutes, shaking the basket halfway through cooking for even crispiness. They should be golden brown and tender.

              Marinate the Salmon:

                - While the sweet potatoes are cooking, prep the salmon. Pat the fillets dry with a paper towel.

                  - In a small bowl, mix BBQ sauce, olive oil, garlic powder, paprika, salt, and pepper.

                    - Brush this mixture generously over the salmon fillets, allowing them to marinate for at least 5 minutes.

                      Air Fry the Salmon:

                        - Once the sweet potatoes are done, remove them from the air fryer and set them aside, keeping them warm.

                          - Place the marinated salmon fillets in the air fryer basket, skin-side down.

                            - Air fry at 400°F (200°C) for about 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.

                              Serve:

                                - Plate the BBQ salmon alongside the sweet potato wedges. Drizzle any remaining BBQ sauce over the top and garnish with fresh parsley if desired.
