Ingredients

1 cup medjool dates, pitted

1 cup almonds, roasted and unsalted

½ cup almond butter

¼ cup cocoa powder (unsweetened)

1 teaspoon vanilla extract

¼ teaspoon sea salt

¼ cup dark chocolate chips (optional, for extra chocolatey flavor)

2 tablespoons shredded coconut (for rolling, optional)

2 tablespoons chia seeds (optional, for added nutrition)

Instructions

Prepare Your Ingredients: Begin by ensuring that the medjool dates are pitted and soft. If they are a bit hard, soak them in warm water for about 10 minutes, then drain.

Blend the Base: In a food processor, add the pitted dates, almonds, almond butter, cocoa powder, vanilla extract, and sea salt. Blend until the mixture is well-combined and forms a sticky dough. You may need to scrape down the sides of the processor occasionally.

Check the Consistency: If the mixture is too dry, add a teaspoon of water at a time until it reaches a moldable consistency. You can also stir in dark chocolate chips if you want an extra touch of chocolate.

Form the Balls: Once the mixture is ready, use your hands to scoop out small amounts (about 1 tablespoon each) and roll them into balls. Place the balls on a baking sheet lined with parchment paper.

Coat the Balls (optional): If desired, roll the balls in shredded coconut or chia seeds for added texture and flavor.

Chill: Place the baking sheet with the balls in the refrigerator for at least 30 minutes to firm up and allow the flavors to meld together.

Enjoy! After chilling, serve the almond butter chocolate date balls as a healthy snack or dessert. Store leftovers in an airtight container in the fridge for up to a week.
