Apple Cinnamon Crumble Muffins

For the Muffin Batter:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups peeled, cored, and diced apples (preferably Granny Smith or Honeycrisp)

For the Crumble Topping:

1/2 cup all-purpose flour

1/3 cup packed brown sugar

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

1/2 cup rolled oats

1/4 cup chopped nuts (optional, such as walnuts or pecans)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    Prepare the Muffin Batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. In another bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

      Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Stir until just combined. Do not overmix. Gently fold in the diced apples until evenly distributed.

        Make the Crumble Topping: In a separate bowl, mix together the flour, brown sugar, and cinnamon. Pour in the melted butter, and add the rolled oats and nuts (if using). Mix until crumbly and cohesive.

          Fill Muffin Tins: Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Evenly distribute the crumble topping over each muffin, pressing it down slightly.

            Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be golden and the crumble topping nicely browned.

              Cool and Enjoy: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
