Ingredients

2 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/2 cup granulated sugar

2 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/2 cup milk

1 large egg

1 tsp vanilla extract

2 tbsp melted butter

Vegetable oil (for frying)

Powdered sugar (for dusting)

Instructions

Begin by prepping your apples. Peel, core, and dice the apples into small cubes, then set them aside in a bowl. If you like, you can toss them with a pinch of cinnamon and a teaspoon of lemon juice to prevent browning and enhance flavor.

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, nutmeg, and salt until evenly combined.

In another bowl, combine the milk, egg, vanilla extract, and melted butter. Whisk until well blended.

Gradually pour the wet ingredients into the dry ingredients, stirring gently to combine. Be careful not to overmix; the batter should be thick but slightly lumpy.

Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter.

In a deep skillet or pot, heat vegetable oil over medium heat (about 350°F or 175°C). You’ll need enough oil to submerge the fritters, about 2 inches deep.

Using a spoon or cookie scoop, carefully drop small amounts of batter (about 2 tablespoons each) into the hot oil, making sure not to overcrowd the pan.

Fry the fritters for about 3-4 minutes on one side until golden brown, then use a slotted spoon to turn them over and cook for an additional 2-3 minutes.

Once cooked to a perfect golden color, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

Allow them to cool slightly before dusting with powdered sugar for a sweet finishing touch.

Serve warm, and enjoy these delightful cinnamon-spiced apple fritters with your favorite dipping sauce (like caramel or maple syrup) or simply on their own!
