Ingredients

2 cups rolled oats

1 medium apple, finely grated (about 1 cup)

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup raisins or mini chocolate chips (optional)

1/4 cup chopped nuts (walnuts or almonds, optional)

1/2 teaspoon vanilla extract

Instructions

Prep the Apple: Start by washing the apple thoroughly. Remove the core (you can leave the skin on for extra nutrients) and grate it using a box grater or food processor. Measure out one cup of the grated apple and set it aside.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, and salt. If you're using any nuts or raisins, add them in at this stage.

Combine Wet Ingredients: In a separate bowl, mix the grated apple, almond butter, honey (or maple syrup), and vanilla extract until smooth and well-combined.

Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is evenly combined. The mixture should be slightly sticky but moldable. If it's too dry, you can add a splash of water or more honey.

Form Bites: With clean hands, take small portions (about a tablespoon each) of the mixture and roll them into bite-sized balls. Place them on a baking sheet lined with parchment paper.

Chill: Once all the bites are formed, place them in the refrigerator for at least 30 minutes to help them firm up.

Serve and Enjoy: After chilling, the Apple Oat Snack Bites are ready to eat! Store any leftovers in an airtight container in the fridge for up to one week.
