1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon cinnamon

16 oz cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

2 teaspoons lemon juice

For the Apple Filling:

3 medium apples (Granny Smith or Honeycrisp), peeled and thinly sliced

½ cup brown sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg

1 tablespoon lemon juice

2 tablespoons cornstarch

For the Topping:

½ cup caramel sauce (store-bought or homemade)

Whipped cream (for serving)

Crushed walnuts or pecans (optional)

Preheat Oven: Start by preheating your oven to 325°F (160°C). Grease a 9x13-inch baking pan and line the bottom with parchment paper for easy removal.

    Prepare the Crust: In a mixing bowl, combined the graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Stir until the mixture resembles wet sand. Press the mixture into the bottom of the prepared baking pan evenly. Bake for 10 minutes, then remove and allow to cool.

      Make the Apple Filling: In a large bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well combined. Set aside to let the flavors meld.

        Prepare the Cheesecake Layer: In a mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the vanilla extract, eggs (one at a time for best results), sour cream, and lemon juice, mixing until fully incorporated and smooth.
