2 ripe avocados

4 large eggs

2 tablespoons Sriracha (plus extra for drizzling)

1 tablespoon lime juice

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped

1/4 cup shredded cheese (cheddar or mozzarella)

Optional toppings: diced tomatoes, green onions, crumbled feta, or jalapeños

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Avocados: Cut the avocados in half lengthwise and remove the pits. If the cavity is small, scoop out a little more flesh with a spoon to make room for the egg.
