Ingredients

8 oz (about 2 cups) elbow macaroni

2 tablespoons unsalted butter

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups whole milk

4 cups sharp white cheddar cheese, grated

1 cup grated Parmesan cheese

3 large eggs

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon ground black pepper

1 teaspoon salt (adjust to taste)

½ cup breadcrumbs (for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C).

Cook the macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

Sauté the aromatics: In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent (about 5-7 minutes). Add the minced garlic and cook for an additional minute until fragrant.

Create the cheese sauce: In the same skillet, whisk in the whole milk and bring it to a simmer. Gradually add the grated sharp white cheddar cheese and grated Parmesan, whisking continuously until the cheeses melt and the sauce is smooth.

Mix in the eggs: In a separate bowl, beat the eggs lightly. Slowly incorporate a ladleful of the warm cheese sauce into the eggs to temper them. Once combined, pour the egg mixture back into the cheese sauce, stirring quickly.

Combine ingredients: Stir the cooked macaroni into the cheese sauce, ensuring all noodles are well coated. Mix in the Dijon mustard, smoked paprika, black pepper, and salt.

Prepare for baking: Pour the macaroni and cheese mixture into a greased 9x13 inch (or similar sized) baking dish, spreading it evenly.

Add the topping: In a small bowl, combine the breadcrumbs with a little melted butter and sprinkle it evenly over the macaroni pie.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and crunchy.

Serve and garnish: Remove the pie from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before slicing and serving.
