Ingredients

1 pound (450g) potato gnocchi (store-bought or homemade)

2 cups cherry tomatoes, halved

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (adjust for spice level)

Salt and pepper to taste

2 cups marinara sauce (preferably homemade or your favorite brand)

8 ounces (225g) fresh mozzarella cheese, cubed

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.

Prepare the Tomato Mixture: In a mixing bowl, combine the halved cherry tomatoes, olive oil, minced garlic, oregano, basil, red pepper flakes, salt, and pepper. Toss until the tomatoes are well coated.

Combine Ingredients: In a large baking dish, mix the cooked gnocchi with the marinara sauce and the prepared tomato mixture. Gently fold in the cubed mozzarella.

Add Cheese: Evenly sprinkle the grated Parmesan cheese over the top of the gnocchi mixture.

Bake: Transfer the baking dish to the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once baked, remove from the oven and let it cool slightly. Garnish with fresh basil leaves. Serve warm and enjoy!
