Beef Tacos with Mango Slaw

For the Beef Filling:

1 lb ground beef (preferably lean)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp sea salt

1/4 tsp black pepper

1 tbsp olive oil

For the Mango Slaw:

1 cup green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 ripe mango, peeled and diced

1/4 cup red onion, thinly sliced

1/4 cup cilantro, fresh and chopped

Juice of 1 lime

1 tbsp honey

Salt and pepper, to taste

For Assembly:

8 small corn tortillas

Lime wedges, for serving

Additional cilantro, for garnish

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat olive oil over medium heat.

      - Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

        - Stir in the ground beef, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).

          - Add cumin, chili powder, smoked paprika, salt, and pepper. Mix well and cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat and set aside.

            Make the Mango Slaw:

              - In a large bowl, combine the shredded green and red cabbage, diced mango, red onion, and cilantro.

                - In a small bowl, whisk together lime juice, honey, salt, and pepper. Pour over the slaw mixture and toss to coat evenly. Adjust seasoning as desired.

                  Warm the Tortillas:

                    - In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until soft and pliable. Keep them warm wrapped in a clean kitchen towel.

                      Assemble the Tacos:

                        - Take a warm tortilla and add a generous scoop of the beef filling followed by a spoonful of the mango slaw.

                          - Garnish with additional cilantro and serve with lime wedges on the side.
