2 cups rolled oats

2 cups almond milk (or milk of choice)

1 cup fresh or frozen blueberries

1/2 cup chopped almonds (or slivered for a different texture)

1/4 cup maple syrup (or honey)

2 ripe bananas, mashed

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

Optional toppings: additional blueberries, sliced bananas, almond slivers, or a sprinkle of coconut

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond milk, mashed bananas, maple syrup, and vanilla extract. Whisk until well blended.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, baking powder, and salt. Stir until incorporated.

        Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring gently to combine. Fold in the blueberries and chopped almonds, ensuring they are evenly distributed throughout the mixture.

          Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly with a spatula. Press down lightly to ensure everything is compact.

            Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the oatmeal has set.
