Ingredients

12 small slider buns (preferably whole wheat)

6 large eggs

1/2 cup milk

Salt and pepper, to taste

1 cup cooked and crumbled breakfast sausage

1 cup shredded sharp cheddar cheese

1 ripe avocado, sliced

1 cup fresh spinach leaves

1 tbsp olive oil or butter (for greasing the skillet)

Optional: Hot sauce for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Eggs: In a large mixing bowl, whisk together the eggs and milk. Season with salt and pepper.

Cook the Egg Mixture: In a greased skillet over medium heat, pour in the egg mixture. Cook while gently stirring until they are just set but still creamy—this should take about 4-5 minutes. Remove from heat.

        Assemble the Sliders:

          - Split the slider buns in half horizontally.

            - On the bottom half of each bun, layer the cooked sausage, followed by the scrambled eggs, shredded cheddar cheese, avocado slices, and a handful of spinach.

Top with Buns: Place the top half of each slider bun on top of the fillings.

Bake the Sliders: Arrange the assembled sliders on a baking sheet. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and the buns are slightly toasted.

Serve: Remove from the oven and let cool for a couple of minutes. Serve warm with hot sauce on the side if desired.
