Caramel Apple Rice Krispie Treats

4 cups Rice Krispies cereal

1 cup mini marshmallows

½ cup unsalted butter

1 cup apple cider (reduced to ½ cup)

1 cup caramel sauce (store-bought or homemade)

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

½ cup diced apples (preferably tart apples like Granny Smith)

½ cup chopped nuts (optional, like walnuts or pecans)

Additional caramel sauce for drizzling

A pinch of flaky sea salt (for garnish)

Instructions
 

Reduce the Apple Cider: In a small saucepan over medium heat, bring the apple cider to a gentle boil. Reduce the heat and let it simmer until it thickens and reduces to about ½ cup (this should take around 10-15 minutes). Set aside to cool slightly.

    Prepare Your Pan: Line a 9x13 inch baking dish with parchment paper, leaving some overhang for easy removal later. Lightly butter or spray the parchment paper with cooking spray.

      Melt the Butter and Marshmallows: In a large pot or saucepan, melt the unsalted butter over low heat. Once melted, add the mini marshmallows and stir continuously until they are completely melted and smooth.

        Combine with Cereal: Remove the pot from heat, and immediately stir in the reduced apple cider, caramel sauce, vanilla extract, and ground cinnamon until well combined. Then, gently fold in the Rice Krispies cereal until they are fully coated.

          Add Apples and Nuts: Fold in the diced apples and chopped nuts if you’re using them. Make sure everything is well mixed.

            Transfer to the Pan: Pour the mixture into the prepared baking dish. Using a buttered spatula or your hands (lightly sprayed with cooking spray), press the mixture evenly into the pan. Make sure it’s firm but not overly compacted.

              Let Set: Allow the Rice Krispie treats to cool at room temperature for at least 30 minutes, or until completely set.

                Drizzle with Caramel: Once set, remove the treats from the pan by lifting the parchment paper. Drizzle additional caramel sauce on top and sprinkle a pinch of sea salt for that perfect contrast.

                  Cut and Serve: Cut into squares or rectangles and serve! For extra presentation, you can garnish with thin apple slices or extra nuts.
