1 cup rolled oats

1 cup grated carrots (about 2 medium carrots)

1/2 cup almond flour

1/2 cup brown sugar (packed)

1/2 cup unsweetened applesauce

1/4 cup maple syrup

1/4 cup coconut oil (melted)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup raisins (optional)

1/2 cup chopped walnuts (optional)

Cream cheese frosting (optional, for topping)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the rolled oats, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until well mixed.

      In another bowl, whisk together the brown sugar, applesauce, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth.

        Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the grated carrots, raisins, and walnuts if using.

          Pour the mixture into the prepared baking dish and spread it evenly with a spatula.

            Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

              Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
