Charcuterie Chicken Skillet

Ingredients
  

4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 cup sliced salami

1 cup sliced pepperoni

1 cup Brie cheese, cut into small pieces

1 cup grape or cherry tomatoes, halved

1/2 cup pitted green olives, sliced

1/2 cup red wine or chicken broth

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crackers and baguette slices (for serving)

Instructions
 

Prepare the Chicken: Pat the chicken thighs dry with paper towel and season both sides with salt and pepper.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken thighs and cook for about 5-7 minutes on each side until they are golden brown and cooked through. Transfer the chicken to a plate and set aside.

      Sauté the Meats: In the same skillet, add the sliced salami and pepperoni. Sauté for about 3-4 minutes until they are slightly crispy and fragrant.

        Add Veggies and Liquid: Stir in the halved tomatoes and sliced green olives. Cook for another 2 minutes, then pour in the red wine (or chicken broth) and let it simmer for about 3 minutes, scraping any brown bits from the bottom of the skillet.

          Melt the Cheese: Reduce the heat to low, add the Brie cheese and fresh thyme to the skillet. Allow the cheese to melt gently while stirring occasionally.

            Combine: Return the chicken thighs to the skillet, spooning the sauce and melted cheese over them. Let everything simmer together for another 2-3 minutes until heated through.

              Serve: Remove from heat, garnish with chopped fresh parsley, and serve with crackers and baguette slices on the side for dipping.
