Ingredients

1 lb (450g) ground beef

2 cups elbow macaroni

1 medium onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chilies

1 can (10.5 oz) cream of mushroom soup

2 cups shredded cheddar cheese

1 cup milk

1 teaspoon Worcestershire sauce

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1 cup breadcrumbs (optional)

2 tablespoons olive oil

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

Prepare the Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent (about 5 minutes). Stir in the minced garlic and sauté for an additional 1 minute.

Brown the Beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and cooked through (about 7-8 minutes). Drain excess fat if necessary.

Combine Ingredients: Stir in the diced tomatoes (with juices), cream of mushroom soup, milk, Worcestershire sauce, Italian herbs, salt, and pepper. Let simmer for about 5 minutes, allowing the flavors to blend.

Assemble the Casserole: In a large mixing bowl, combine the cooked macaroni and beef mixture. Fold in 1.5 cups of shredded cheddar cheese until evenly distributed.

Transfer to Casserole Dish: Preheat your oven to 350°F (175°C). Transfer the mixture into a greased 9x13 inch casserole dish. Top with the remaining cheddar cheese, and sprinkle breadcrumbs on top if using.

Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and golden brown on top.

Serve: Let the casserole cool for a few minutes before serving. Garnish with fresh parsley or chives if desired. Enjoy your hearty Cheesy Beef and Mac Casserole!
