2 cups cooked and shredded chicken

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 cup salsa (mild, medium, or hot based on preference)

1 packet taco seasoning (about 1 oz)

1 cup sour cream

2 cups shredded cheddar cheese (divided)

1 cup crushed tortilla chips (plus extra for topping)

1 medium bell pepper, diced (any color)

1 small red onion, diced

1 tablespoon olive oil

Chopped fresh cilantro (for garnish)

Slices of jalapeño (optional, for heat)

Sour cream or avocado (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper and red onion. Sauté for about 5-7 minutes until they soften.

      Combine Fillings: In a large mixing bowl, combine the cooked shredded chicken, black beans, corn, salsa, and taco seasoning. Mix well until all ingredients are evenly incorporated.

        Add Cream & Cheese: Stir in the sour cream and 1 cup of shredded cheddar cheese into the chicken mixture until everything is well combined.

          Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips evenly on the bottom. Pour half of the chicken mixture over the chips. Repeat the layers with the remaining tortilla chips and chicken mixture.

            Cheesy Topping: Sprinkle the remaining cup of shredded cheddar cheese on top of the final layer of the chicken mixture. Top with additional crushed tortilla chips for added crunch.

              Bake the Casserole: Cover the baking dish with aluminum foil (to prevent excessive browning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for about 5 minutes. Garnish with chopped fresh cilantro and jalapeño slices if desired. Serve warm with additional sour cream or avocado on the side.
