1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 can (15 ounces) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup salsa

1 cup shredded cheddar cheese

2 cups crushed tortilla chips

1 cup sour cream

1 cup diced tomatoes (optional for topping)

1/4 cup sliced green onions (optional for garnish)

1 tablespoon olive oil

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes). Add the ground beef to the skillet, breaking it up with a spoon. Season with salt and pepper. Cook until browned and no longer pink, about 5-7 minutes.

      Add Seasonings: Drain any excess fat, then stir in the taco seasoning, black beans, corn, and salsa. Cook for another 5 minutes, allowing the flavors to meld together. Remove from heat.

        Layer the Dish: In a greased 9-inch pie dish, spread half of the crushed tortilla chips as the base. Pour the seasoned beef mixture over the chips, spreading evenly. Sprinkle half of the shredded cheddar cheese on top.

          Top It Off: Add the remaining crushed tortilla chips over the cheese, followed by the sour cream dollops, and then the rest of the cheddar cheese on the top.

            Bake: Place the pie in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

              Serve: Once out of the oven, let the pie cool for about 5 minutes. If desired, top with diced tomatoes and garnish with sliced green onions before serving.
