Ingredients

1 large head of cauliflower, cut into florets

1 cup of shredded sharp cheddar cheese

1 cup of cream cheese, softened

1/2 cup of sour cream

1/2 cup of jalapeños, diced (fresh or pickled, adjusted to heat preference)

1/2 teaspoon of garlic powder

1/2 teaspoon of onion powder

1 teaspoon of smoked paprika

Salt and pepper to taste

1/2 cup of breadcrumbs (optional for topping)

2 tablespoons of chopped fresh cilantro (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes, or until tender but still firm. Drain and set aside.

Prepare the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth and well combined.

Add Cheese and Jalapeños: Stir in the shredded cheddar cheese and diced jalapeños into the cheese mixture. Adjust the seasoning if needed.

Combine Cauliflower and Cheese Mixture: Gently fold the cooked cauliflower florets into the cheese and jalapeño mixture until they are well-coated.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

Optional Breadcrumb Topping: If you prefer a crunchy topping, sprinkle the breadcrumbs evenly across the top of the cauliflower bake.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.

Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro before serving.

Enjoy: Serve warm as a delightful side dish or a vegetarian main course!
