1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 small head of romaine lettuce, leaves separated

¼ cup dairy-free Caesar dressing (store-bought or homemade)

¼ cup nutritional yeast (for a cheesy flavor)

¼ cup cherry tomatoes, halved

Fresh parsley, finely chopped (for garnish)

Optional: croutons for topping

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). In a medium bowl, combine the drained chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until the chickpeas are evenly coated.

    Bake the Chickpeas: Spread the seasoned chickpeas onto a baking sheet in a single layer. Bake for 20-25 minutes or until they are crispy, shaking the pan halfway through for even cooking. Remove from the oven and let them cool slightly.
