Ingredients

2 cups fresh blueberries

1 cup Greek yogurt (vanilla or plain)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

1/4 cup crushed graham crackers or granola (for topping)

Fresh mint leaves for garnish

Instructions

Prepare the Yogurt Mixture: In a medium mixing bowl, combine Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon (if using). Stir until smooth and well-blended.

Coat the Blueberries: Rinse the fresh blueberries gently under cold water and pat them dry with a paper towel. Dip each blueberry into the yogurt mixture, ensuring they are completely coated.

Create Layers: Place the yogurt-coated blueberries on a parchment-lined baking sheet. Make sure they're spaced out to avoid sticking together.

Add Toppings: Once all blueberries are coated, sprinkle crushed graham crackers or granola on top of them while the yogurt is still wet, allowing it to stick to the surface.

Chill: Transfer the baking sheet to the freezer and let the blueberries chill for at least 1 to 2 hours, or until the yogurt coating is firm and solid.

Serve: Once frozen, remove the blueberry bites from the freezer. Let them sit at room temperature for 5 minutes before serving for easier eating. Garnish with fresh mint leaves before serving.

Store: Any leftovers can be stored in an airtight container in the freezer for up to a week.
