Maceration is crucial in bringing out the natural sweetness and flavor of strawberries. To achieve the best results, start by selecting ripe, fresh strawberries. Once you have your strawberries, wash them gently under cool water and pat them dry. Slice them into quarters or halves, depending on their size, to maximize surface area.

Ingredients

2 cups fresh strawberries, hulled and sliced

3 tablespoons sugar (adjust for sweetness)

1 teaspoon vanilla extract

2 cups whole milk

1/2 cup heavy cream

1/4 cup cornstarch

1/4 teaspoon salt

1/2 teaspoon lemon juice

Whipped cream, for serving (optional)

Fresh strawberries, for garnish (optional)

Instructions

Macarate the Strawberries: In a bowl, combine the sliced strawberries with 2 tablespoons of sugar and the lemon juice. Toss to coat and let them sit for about 15 minutes to release their juices.

Make Strawberry Milk: In a blender, combine the macerated strawberries along with their juices, milk, and vanilla extract. Blend until smooth. Set aside a few spoonfuls of the mixture for garnish later.

Prepare the Pudding Base: In a saucepan over medium heat, mix the heavy cream, remaining tablespoon of sugar, salt, and cornstarch. Whisk continuously until the mixture starts to thicken and bubbles begin to form, about 5-7 minutes.

Combine Mixtures: Remove the saucepan from heat and slowly pour in the strawberry milk mixture while whisking continuously to ensure no lumps form. Return to low heat for an additional 2-3 minutes.

Cool the Mixture: Once the pudding base is smooth and thick, pour it into individual serving cups or bowls. Allow it to cool at room temperature for 15 minutes, then cover with plastic wrap and refrigerate for at least 2 hours or until completely chilled.

Serve: Once chilled, remove the pudding from the refrigerator. Top each serving with whipped cream if desired, a drizzle of the reserved strawberry sauce, and garnish with fresh strawberries.

Enjoy your refreshing Chilled Strawberry Milkshake Pudding!
