Cinnamon Apple Hand Pies

2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon unsalted butter

1 package (14 oz) refrigerated pie crusts (or homemade pie dough)

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

1/4 teaspoon salt

1 teaspoon vanilla extract

Powdered sugar (for dusting, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Apple Filling: In a medium saucepan over medium heat, combine the diced apples, granulated sugar, ground cinnamon, lemon juice, and salt. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender but still hold their shape. Remove from heat and stir in the vanilla extract and butter. Let it cool slightly.

      Roll Out the Pie Crust: On a lightly floured surface, unroll the pie crusts. If using homemade dough, roll it out to about 1/8-inch thickness. Using a sharp knife or a round cutter, cut out circles approximately 5-6 inches in diameter.

        Fill the Hand Pies: Place a generous tablespoon of the apple mixture in the center of each dough circle. Be careful not to overfill, or they will burst during baking.

          Seal the Pies: Fold the dough over to create a half-moon shape. Press the edges together to seal and then crimp with a fork for a decorative touch. Repeat with the remaining circles and apple filling.

            Prepare for Baking: In a small bowl, whisk together the egg and milk to create an egg wash. Brush the top of each hand pie with the egg wash for a golden finish. Use a sharp knife to cut 2-3 small slits on top of each pie to allow steam to escape.

              Bake the Hand Pies: Place the filled hand pies on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until golden brown and puffed up.

                Cool and Serve: Once baked, remove the hand pies from the oven and allow them to cool on a wire rack. Dust with powdered sugar before serving, if desired.
