Cinnamon Raisin Baked Oats

2 cups rolled oats

2 cups unsweetened almond milk (or any milk of choice)

1 medium ripe banana, mashed

1/4 cup maple syrup (or honey, if not vegan)

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 cup raisins

1/4 cup chopped walnuts (optional)

1 tablespoon coconut oil or butter (for greasing)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish (preferably 8x8 inches or similar) with coconut oil or butter.

    Mix Wet Ingredients: In a large mixing bowl, combine the unsweetened almond milk, mashed banana, maple syrup, and vanilla extract. Whisk until well combined.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, ground cinnamon, salt, and baking powder. Stir until the dry ingredients are evenly distributed.

        Combine Everything: Pour the wet ingredients into the bowl containing the dry ingredients. Add the raisins and walnuts, if using, and mix gently until everything is well incorporated.

          Transfer to Baking Dish: Pour the mixture into the greased baking dish, spreading it out evenly.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the oats are set.

              Cool & Serve: Once done, let it cool for about 10 minutes. Cut into squares and serve warm. Enjoy as is or add a splash of milk, a drizzle of maple syrup, or extra fresh fruit as toppings.
