Classic Chicken Cordon Bleu Bake

4 boneless, skinless chicken breasts

8 slices of Swiss cheese

8 slices of deli ham (preferably Black Forest or honey ham)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko preferred for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 cup Dijon mustard (for serving)

1 cup chicken broth

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Oven:

    Preheat your oven to 375°F (190°C).

      Prepare the Chicken:

        Place one chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to about 1/2 inch thick. Repeat with all chicken breasts.

          Layer Ham and Cheese:

            On each flattened chicken breast, place 2 slices of ham followed by 2 slices of Swiss cheese. Roll up each chicken breast tightly, starting from one end, and secure with toothpicks or kitchen twine. Repeat with all breasts.

              Set Up Breading Station:

                In three separate shallow dishes, place the flour in the first, whisk the eggs in the second, and combine the breadcrumbs, garlic powder, onion powder, thyme, salt, and pepper in the third.

                  Bread the Chicken:

                    Dredge each chicken roll in flour, shaking off excess. Dip into the beaten egg, allowing excess to drip off, then roll into the breadcrumb mixture, pressing gently to adhere.

                      Brown the Chicken:

                        In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the stuffed chicken rolls and cook for about 4-5 minutes on each side, or until golden brown. Transfer the skillet to the oven.

                          Bake:

                            Pour the chicken broth around the chicken rolls in the skillet. Bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).

                              Serve:

                                Carefully remove the toothpicks or twine from the chicken rolls. Serve hot, drizzled with Dijon mustard and garnished with freshly chopped parsley.
