Classic Chocolate Fudge Cake

1¾ cups (220g) all-purpose flour

2 cups (400g) granulated sugar

¾ cup (65g) unsweetened cocoa powder

1½ teaspoons baking powder

1½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup (240ml) whole milk

½ cup (120ml) vegetable oil

2 teaspoons vanilla extract

1 cup (240ml) boiling water

Optional: chocolate chips or nuts for added texture

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to help the cakes release easily after baking.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined. This helps to aerate the flour and ensure there's no clumping.

      Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for about 2 minutes until the batter is smooth.

        Incorporate Boiling Water: Carefully stir in the boiling water (this will thin the batter). The batter will be quite loose, which is normal.

          Optional Add-Ins: If using chocolate chips or nuts, fold them into the batter at this stage.

            Bake the Cake: Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

              Cool the Cakes: Once baked, allow the cakes to cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.

                Frosting (Optional): For frosting, you can use a classic chocolate buttercream or a ganache. Simply beat together 1 cup (230g) unsalted butter, 3½ cups (440g) powdered sugar, ½ cup (50g) cocoa powder, and 2-4 tablespoons of milk until fluffy and easily spreadable.

                  Assemble: Once cooled, place one cake layer on a serving plate. Spread frosting on top, then place the second cake layer on top and frost the top and sides of the entire cake.

                    Decorate and Serve: Optional: Garnish with chocolate shavings, sprinkles, or fresh berries. Slice and serve!
