2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

2 (14-ounce) cans of crushed tomatoes (or 2 pounds fresh ripe tomatoes, diced)

1 teaspoon sugar (optional, to balance acidity)

4 cups vegetable broth or chicken broth

1 teaspoon dried oregano

Salt and pepper to taste

1 cup fresh basil leaves, chopped (plus extra for garnish)

½ cup heavy cream (optional for a creamier soup)

Grated Parmesan cheese (for serving)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for another minute, until fragrant.

    Add Tomatoes and Seasonings: Pour in the crushed tomatoes (or diced fresh tomatoes), sugar, vegetable broth, and oregano. Season with salt and pepper. Bring the mixture to a simmer and let it cook for about 20 minutes to meld the flavors.

      Blend the Soup: Remove the pot from heat. Using an immersion blender, puree the soup until smooth. (Alternatively, transfer the soup in batches to a countertop blender and blend until smooth, then return it to the pot.)

        Incorporate Fresh Basil: Stir in the chopped fresh basil and, if desired, the heavy cream for a richer flavor. Allow the soup to simmer gently for another 5 minutes, so the basil infuses the soup.
