Cold Chicken & Orzo Salad

1 cup orzo pasta

2 cups cooked chicken, diced or shredded (grilled or rotisserie works best)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions
 

Cook the Orzo: In a large pot of boiling salted water, cook the orzo pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Chicken: If using a whole rotisserie chicken, remove the skin and shred the meat into bite-sized pieces. If grilling your own chicken, season it with salt, pepper, and a sprinkle of oregano, grill until cooked through, and then dice it up.

      Mix the Vegetables: In a large mixing bowl, combine the cooled orzo with the diced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.

        Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper until well combined.

          Combine Everything: Pour the dressing over the orzo and chicken mixture. Toss gently until everything is evenly coated.

            Chill: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together. This salad can also be made a day in advance for even better flavor.

              Garnish and Serve: Just before serving, sprinkle with fresh parsley for a burst of color and freshness. Give the salad a final mix and serve chilled.
