2 medium zucchinis

1 cup cooked chicken breast, shredded

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup fresh basil leaves, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1/4 cup black olives, sliced

Prepare the Zoodles: Using a spiralizer or a vegetable peeler, create noodle-like strands from the zucchinis. If using a peeler, create thin strips resembling linguine. Place in a colander, sprinkle lightly with salt, and let them sit for about 15 minutes to draw out excess moisture.

    Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined. Adjust seasoning according to taste.

      Combine the Ingredients: In a large salad bowl, combine the shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, and basil. If using olives, add them at this stage.

        Dry the Zoodles: After 15 minutes, gently squeeze the zoodles to remove excess water. Pat dry with a paper towel if needed to avoid a watery salad.

          Final Assembly: Add the zoodles to the salad bowl and pour the dressing over the entire mixture. Toss gently until all ingredients are evenly coated with the dressing.
