Cold Quinoa Tabbouleh

1 cup quinoa, rinsed

2 cups water

1 cup fresh parsley, finely chopped

1/2 cup fresh mint leaves, finely chopped

1 medium cucumber, diced

1 cup cherry tomatoes, quartered

1/4 cup red onion, finely diced

1/4 cup extra virgin olive oil

1/4 cup freshly squeezed lemon juice

1 tsp salt (adjust to taste)

1/2 tsp black pepper

1/2 tsp ground cumin

1 avocado, diced (optional)

1/4 cup pomegranate seeds for garnish (optional)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat. Once it boils, reduce the heat to low, cover, and simmer for about 15 minutes or until all water is absorbed and quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork and let it cool completely.

    Prepare the Vegetables: While the quinoa cools, chop the parsley, mint, cucumber, cherry tomatoes, and red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and cumin until combined.

        Combine Ingredients: In a large mixing bowl, add the cooled quinoa, chopped parsley, mint, cucumber, cherry tomatoes, red onion, and avocados (if using). Pour the dressing over the mixture and toss gently until everything is well coated.

          Garnish and Serve: Transfer the tabbouleh to a serving dish. If desired, sprinkle with pomegranate seeds for an extra crunch and a touch of sweetness.

            Chill: Refrigerate for about 30 minutes before serving to allow the flavors to meld.
