1 cup couscous

1 1/4 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/2 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

Salt and pepper to taste

1 teaspoon garlic powder (optional)

1/4 teaspoon crushed red pepper flakes (optional)

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes, allowing the couscous to absorb the liquid. Afterward, fluff it with a fork and let it cool.

    Chop the Vegetables: While the couscous cools, prepare your vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and basil.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic powder, crushed red pepper flakes (if using), and season with salt and pepper to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, chopped basil, and feta cheese (if using).

          Add Dressing: Pour the dressing over the salad and toss everything together until well mixed.
