4 cups green cabbage, thinly shredded

1 cup red cabbage, thinly shredded

1 cup carrots, grated

1 cup fresh cranberries, roughly chopped (or 3/4 cup dried cranberries)

1 large apple, cored and chopped (preferably a tart variety like Granny Smith)

1/2 cup green onions, chopped

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey (adjust based on sweetness preference)

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1/4 cup sunflower seeds or chopped walnuts for crunch

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, and chopped apple. If using fresh cranberries, add them at this step.

    Mix the Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth and well combined.

      Combine: Pour the dressing over the cabbage mixture and toss gently to coat all the ingredients evenly. If using dried cranberries, add them now.

        Add Crunch: For extra texture, fold in the sunflower seeds or chopped walnuts gently.

          Chill: Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
