Cranberry Orange Biscotti

2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 1 large orange

1 teaspoon vanilla extract

1 cup dried cranberries

1/2 cup chopped almonds (optional)

1/2 cup white chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy using an electric mixer (about 2-3 minutes).

        Add eggs, orange zest, and vanilla extract to the butter-sugar mixture. Beat until well incorporated, about 1 minute.

          Gradually mix in the dry ingredients until just combined. Do not overmix.

            Fold in the dried cranberries and chopped almonds (if using) gently with a spatula, ensuring even distribution throughout the dough.

              Form the dough into a large log (about 12 inches long) on the prepared baking sheet, flattening it slightly to about 1 inch in thickness.

                Bake for 25-30 minutes or until the top is set and golden brown. Let it cool for about 10 minutes on the baking sheet.

                  Transfer to a cutting board, and using a serrated knife, slice the log diagonally into 1/2-inch thick pieces.

                    Place the slices back on the baking sheet cut side down.

                      Bake again for another 10-15 minutes until the biscotti are crisp and golden, turning them halfway through for even baking.

                        Remove from the oven and let cool completely on a wire rack. If desired, melt white chocolate chips and drizzle over the cooled biscotti for extra sweetness and decoration.
