Creamy Avocado Ranch Pasta

12 oz pasta (your choice, but fettuccine or penne works great)

2 ripe avocados, pitted and peeled

1 cup sour cream or Greek yogurt

1/2 cup buttermilk

1 packet (about 1 oz) ranch dressing mix

2 cloves garlic, minced

1 tablespoon lemon juice (freshly squeezed)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

1/4 cup cherry tomatoes, halved (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Avocado Sauce: While the pasta is cooking, in a blender or food processor, combine the avocados, sour cream or Greek yogurt, buttermilk, ranch dressing mix, minced garlic, and lemon juice. Blend until smooth and creamy. If the mixture is too thick, add in a little reserved pasta water until you reach your desired consistency.

      Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta with the creamy avocado ranch sauce. Toss gently to coat the pasta evenly. If needed, add more reserved pasta water to loosen the sauce.

        Season: Taste and adjust the seasoning with salt and pepper according to your preference.

          Garnish and Serve: Serve the pasta warm, topped with chopped fresh parsley, halved cherry tomatoes, and if desired, a sprinkle of grated Parmesan cheese.
