Ingredients

1 medium butternut squash (about 2-3 pounds), peeled, seeded, and cubed

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons olive oil

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer flavor)

1 teaspoon ground ginger (or fresh grated ginger)

1 teaspoon ground cinnamon

½ teaspoon nutmeg

Salt and pepper to taste

Optional garnish: pumpkin seeds, a drizzle of olive oil, or fresh herbs

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and continue cooking for another minute until fragrant.

Cook the Squash: Stir in the cubed butternut squash, ground ginger, cinnamon, and nutmeg. Cook for an additional 5 minutes, stirring occasionally, allowing the spices to bloom.

Add Broth: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes, or until the butternut squash is tender.

Blend the Soup: Remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a regular blender, blending until creamy. If you prefer a chunkier texture, blend only half of the soup.

Incorporate Coconut Milk: Stir in the coconut milk or heavy cream, and season with salt and pepper to taste. Return the pot to low heat and warm the soup for about 5 minutes, allowing the flavors to meld together.

Serve and Garnish: Ladle the creamy butternut squash soup into bowls and garnish with pumpkin seeds, a drizzle of olive oil, or a sprinkle of fresh herbs as desired.
