Creamy Cajun Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning (adjust to taste)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon smoked paprika

Salt and black pepper to taste

¼ cup fresh parsley, chopped (for garnish)

Zest and juice of 1 lemon

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Season the Shrimp: In a mixing bowl, toss the shrimp with Cajun seasoning until evenly coated.

      Sauté the Shrimp: In a large skillet over medium-high heat, heat the olive oil. Add the seasoned shrimp in a single layer and cook for 2-3 minutes on each side or until pink and opaque. Remove shrimp from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add chopped onion and diced bell pepper. Sauté for about 3-4 minutes, or until softened. Add minced garlic and cook for an additional minute until fragrant.

          Make the Cream Sauce: Pour in the chicken broth and bring to a gentle simmer. Add in the heavy cream and stir well. Allow the sauce to simmer for about 5 minutes until slightly thickened.

            Combine Ingredients: Stir in the Parmesan cheese, smoked paprika, lemon zest, and juice. Season with salt and black pepper to taste. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.

              Add the Pasta and Shrimp: Toss the cooked fettuccine and sautéed shrimp into the creamy sauce, ensuring everything is well-coated. Heat through for about 2 minutes.

                Garnish and Serve: Remove from heat, garnish with chopped parsley, and serve immediately with additional Parmesan cheese if desired.
