1 lb (450g) carrots, peeled and chopped

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer taste)

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Cook the Carrots: Stir in the chopped carrots, ground cumin, and ground coriander. Cook for another 5 minutes, stirring occasionally.

      Add the Broth: Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the carrots are tender.

        Blend Until Smooth: Using an immersion blender, carefully purée the soup until it's smooth and creamy. If you don’t have an immersion blender, transfer the soup in batches to a countertop blender, then return it to the pot.

          Incorporate Coconut Milk: Stir in the coconut milk (or heavy cream) until well combined. Allow the soup to heat through, but do not let it boil. Season with salt and pepper to taste.
