12 oz cheese tortellini (fresh or frozen)

2 boneless, skinless chicken breasts (about 1 lb)

2 tbsp olive oil

Salt and pepper, to taste

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach (optional)

1 tsp Italian seasoning

Fresh parsley, chopped (for garnish)

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the tortellini cooks, season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts to the pan and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes, then slice into thin strips.

      Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring it to a gentle simmer. Stir constantly and let it cook for 2-3 minutes until it thickens slightly.

        Combine Ingredients: Slowly whisk in the grated Parmesan cheese and Italian seasoning until the cheese is fully melted and the sauce is creamy. If the sauce is too thick, add a splash of pasta water to reach your desired consistency. Add the cooked tortellini and sliced chicken to the sauce, tossing to coat well. If desired, fold in the baby spinach until wilted.
