Ingredients

2 cups ripe cherry tomatoes, halved

1 medium cucumber, peeled and diced

1 bell pepper (red or yellow), diced

1 small red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh basil leaves, packed

1/4 cup fresh parsley leaves, packed

1 cup vegetable or chicken broth, chilled

1 cup coconut milk (or heavy cream)

Salt and pepper, to taste

Juice of 1 lemon

Olive oil, for drizzling

Optional toppings: Croutons, additional herbs, or a drizzle of balsamic reduction

Instructions

Prep the Vegetables: In a large bowl, combine the halved cherry tomatoes, diced cucumber, bell pepper, diced red onion, and minced garlic. Toss gently and set aside to marinate for about 10 minutes to allow the flavors to meld.

Blend the Base: In a blender, combine the marinated vegetable mixture with the fresh basil and parsley. Pour in the chilled vegetable or chicken broth and blend until smooth. You may need to blend in batches depending on the size of your blender.

Make It Creamy: Add the coconut milk (or heavy cream) to the blended vegetable mix and blend again until fully combined and creamy. If the soup is too thick, you can add a little more broth or water to achieve your desired consistency.

Season to Perfection: Taste the soup and season with salt, pepper, and lemon juice. Blend again briefly to incorporate the seasoning.

Chill the Soup: Transfer the creamy soup into a container and refrigerate for at least 1 hour, or until thoroughly chilled.

Serve: Ladle the cold soup into bowls. Drizzle with olive oil and garnish with croutons, additional herbs, or a balsamic reduction for an extra touch of flavor. Enjoy your refreshing summer delight!
