Creamy Garlic Spinach Penne

12 oz penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

5 oz fresh baby spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1 tablespoon lemon juice

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent, about 3-4 minutes.

      Add Spinach: Stir in the fresh baby spinach and cook until wilted, approximately 2-3 minutes.

        Make the Cream Sauce: Reduce the heat to low, then pour in the heavy cream. Stir well to combine with the garlic and spinach mixture. Add the grated Parmesan cheese and Italian seasoning, mixing until the cheese is entirely melted and the sauce is smooth.

          Combine Pasta and Sauce: Add the drained penne pasta to the cream sauce. If the sauce is too thick, gradually stir in some reserved pasta water until desired consistency is achieved. Season with salt, black pepper, and lemon juice to taste.

            Serve: Remove from heat, and serve immediately. Garnish with fresh basil leaves if desired.
