Creamy Lemon Ricotta Pasta

12 oz (340g) spaghetti or fettuccine

1 cup fresh ricotta cheese

Zest of 1 large lemon

1/4 cup freshly squeezed lemon juice (about 2 lemons)

1/2 cup grated Parmesan cheese, plus extra for garnish

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1/4 cup fresh basil leaves, chopped (for garnish)

1/4 cup pine nuts, toasted (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Creamy Sauce: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Mix the Ricotta Mixture: In a mixing bowl, combine the ricotta cheese, lemon zest, and lemon juice. Stir until creamy and well-mixed. Season with salt and pepper to taste.

        Combine: Reduce the heat to low, then add the drained pasta to the skillet with garlic. Pour in the ricotta mixture, and gently toss to combine, adding reserved pasta water a little at a time until you reach your desired creaminess.
