Ingredients

1 cup coconut cream (canned)

1/2 cup Greek yogurt (plain)

1/4 cup freshly squeezed lime juice (about 2 limes)

1 tablespoon lime zest (from 1 lime)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup crushed graham crackers or digestive biscuits

1/4 cup unsweetened shredded coconut (toasted optional)

Fresh lime slices and mint leaves for garnish (optional)

Instructions

Prepare the Creamy Base: In a medium mixing bowl, whisk together the coconut cream, Greek yogurt, freshly squeezed lime juice, lime zest, honey (or maple syrup), vanilla extract, and salt. Mix until the mixture is smooth and creamy.

Make the Crust Layer: In a separate small bowl, combine the crushed graham crackers and shredded coconut (if using). Stir well until the mixture is combined. This will form the base for the dessert.

Assemble the Layers: In serving glasses or bowls, start by adding a layer of the crumb mixture at the bottom. Then, spoon in a generous layer of the creamy coconut-lime mixture on top. Repeat the layers until the containers are filled, finishing with the creamy mixture on top.

Chill: Cover the glasses or bowls with plastic wrap and place them in the refrigerator. Chill for at least 2 hours, allowing the flavors to meld and the mixture to set.

Garnish Before Serving: Once chilled, remove from the refrigerator. If desired, garnish with some extra toasted coconut flakes, a lime slice, or a sprig of fresh mint for added flair.

Enjoy: Serve chilled as a refreshing dessert that will be the highlight of your meal!
