4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (preferably cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup sour cream

1 cup cream of mushroom soup (canned or homemade)

1 cup shredded mozzarella cheese

1 teaspoon dried thyme

1 teaspoon paprika

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1 cup cooked rice or quinoa (optional, for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and paprika. In a large skillet over medium heat, add the olive oil. Sear the chicken for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms, and cook for an additional 4-5 minutes until the mushrooms release their moisture and become tender.

        Add Spinach: Stir in the chopped spinach. Cook until wilted, about 2 minutes. Remove the skillet from heat.

          Make the Cream Sauce: In a medium bowl, combine the sour cream, cream of mushroom soup, and dried thyme. Mix well until smooth.

            Combine Ingredients: In a large casserole dish, place the seared chicken breasts evenly. Top with the sautéed mushroom and spinach mixture, followed by the creamy sauce. Ensure everything is well distributed.

              Cheese it Up: Sprinkle the shredded mozzarella cheese evenly over the top of the casserole.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                  Serve: Allow the casserole to cool for a few minutes. Garnish with chopped fresh parsley and serve hot over cooked rice or quinoa if desired.
