2 medium zucchinis, spiralized into noodles (zoodles)

2 cups cooked chicken, shredded (rotisserie works great!)

1 cup ranch dressing (store-bought or homemade)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup diced tomatoes (fresh or canned, drained)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried dill

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Zoodles: In a large colander, sprinkle some salt over the spiralized zucchini and let it sit for about 10-15 minutes. This helps draw out excess moisture. Afterward, gently squeeze the zoodles to remove the moisture and set aside.

      Mix the Sauce: In a medium bowl, combine the softened cream cheese, ranch dressing, garlic powder, onion powder, and dried dill. Mix until smooth and well combined.

        Combine Ingredients: In a large mixing bowl, add the cooked shredded chicken, zoodles, diced tomatoes, half of the cheddar, and half of the mozzarella. Pour the ranch mixture over the top and stir until everything is evenly coated.

          Transfer to Baking Dish: Spread the mixture into a greased 9x13 inch baking dish. Smooth out the top for even cooking.

            Add Cheese Topping: Sprinkle the remaining cheddar and mozzarella cheese over the top of the dish.

              Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly, and the edges are lightly golden.
