Ingredients

1 head of garlic

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup mayonnaise

1 tsp lemon juice

1 tbsp olive oil

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

Fresh parsley, finely chopped (for garnish)

Veggies and pita chips (for serving)

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the tops of the cloves. Drizzle with a little olive oil and wrap it in aluminum foil. Roast in the oven for 30-35 minutes, until the cloves are soft and caramelized. Allow to cool slightly.

Prepare the Dip Base: In a mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix well until creamy and smooth.

Squeeze the Garlic: Once the roasted garlic has cooled, squeeze the individual cloves out of their skins into the mixing bowl. You can adjust the amount of garlic based on your taste preference.

Season the Mixture: Add the lemon juice, dried thyme, salt, and black pepper to the bowl. Mix everything together until well combined.

Chill: Cover the dip and refrigerate for at least 30 minutes to let the flavors meld together.

Garnish & Serve: Before serving, sprinkle the top with freshly chopped parsley for a pop of color. Serve this creamy roasted garlic dip with an assortment of fresh veggies like carrots and cucumbers or alongside pita chips for a delightful snack!
