Creamy Roasted Red Pepper Pasta

12 oz. pasta (penne or fusilli)

2 large red bell peppers

3 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp dried oregano

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Roast the Peppers: Preheat your oven to 400°F (200°C). Place the red bell peppers on a baking sheet and drizzle with 1 tablespoon of olive oil. Roast in the oven for about 25-30 minutes, or until the skins are blistered and charred. Once done, remove them and let them cool. After cooling, peel off the skins, remove the seeds, and roughly chop the roasted peppers.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Make the Sauce: In a blender or food processor, combine the roasted red peppers, minced garlic, heavy cream, grated Parmesan cheese, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper. Blend until smooth and creamy.

        Combine: In a large skillet over medium heat, add the remaining 2 tablespoons of olive oil. Pour in the creamy red pepper sauce and bring it to a gentle simmer. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.

          Add the Pasta: Add the cooked pasta to the sauce, tossing to coat the pasta thoroughly. Allow it to heat through for 2-3 minutes, stirring continuously.
