Ingredients

2 lbs ripe tomatoes, quartered

1 large onion, coarsely chopped

4 cloves garlic, peeled

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon dried thyme

1 teaspoon smoked paprika

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1/2 cup fresh basil leaves, plus extra for garnish

1 tablespoon balsamic vinegar (optional)

Instructions

Prepare the Tomatoes: Preheat your oven to 400°F (200°C). On a large baking sheet, spread out the quartered tomatoes, chopped onion, and garlic cloves. Drizzle with olive oil and season with salt, pepper, thyme, and smoked paprika. Toss to coat evenly.

Roast the Vegetables: Roast in the preheated oven for about 30-35 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven and let cool slightly.

Blend the Soup: Once the tomato mixture has cooled a bit, transfer it to a blender. Add the vegetable broth, fresh basil leaves, and balsamic vinegar if using. Blend until smooth and creamy. You may need to do this in batches depending on the size of your blender.

Heat the Soup: Pour the blended mixture into a large pot over medium heat. Stir in the heavy cream and bring the soup to a gentle simmer. Taste and adjust seasoning as needed, adding more salt, pepper, or additional herbs if desired.

Serve: Ladle the creamy roasted tomato and basil soup into bowls. Garnish with extra fresh basil leaves and a drizzle of olive oil if desired. Serve warm with crusty bread or a grilled cheese sandwich for a complete meal.
