Creamy Spinach Artichoke Pasta

8 ounces of pasta (fettuccine or penne)

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup fresh spinach, chopped

1 can (14 ounces) of artichoke hearts, drained and roughly chopped

1 cup cream cheese, softened

1 cup heavy cream

1 cup grated Parmesan cheese

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

¼ cup fresh basil or parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    - Begin by bringing a large pot of salted water to a boil.

      - Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

        Sauté Aromatics:

          - In a large skillet, heat the olive oil over medium heat.

            - Add the diced onion and cook until translucent, about 3-5 minutes.

              - Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

                Add Spinach and Artichokes:

                  - Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

                    - Add the chopped artichoke hearts and mix well.

                      Make the Creamy Sauce:

                        - Lower the heat and add the softened cream cheese to the skillet. Stir until it melts and combines with the vegetables.

                          - Gradually pour in the heavy cream, mixing well to create a smooth sauce.

                            - Incorporate the grated Parmesan cheese, stirring until the cheese is melted and the sauce is creamy.

                              Season:

                                - Add red pepper flakes, salt, and pepper to taste. If the sauce is too thick, add some of the reserved pasta water to achieve your desired consistency.

                                  Combine Pasta and Sauce:
