8 oz penne pasta

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and black pepper, to taste

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped (packed in oil)

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup fresh spinach, roughly chopped

Fresh basil leaves, for garnish

Extra Parmesan, for serving

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and black pepper. In a large skillet over medium heat, add olive oil. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F). Remove from the skillet and let rest for a few minutes before slicing into strips.

      Create the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for another minute. Pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to simmer for 2-3 minutes.
