3 cloves garlic, minced

1 carrot, diced

1 rib celery, diced

2 cans (14 oz each) whole peeled tomatoes, with juices

3 cups vegetable broth

1 tablespoon sugar (optional, to balance acidity)

1 teaspoon salt (to taste)

1/2 teaspoon black pepper

1 cup heavy cream (or coconut cream for a dairy-free option)

1/4 cup fresh basil leaves, chopped (+ extra for garnish)

1 tablespoon balsamic vinegar (optional)

Crusty bread or grilled cheese for serving (optional)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic, diced carrot, and celery, and cook for another 5-7 minutes until the vegetables soften.

    Add Tomatoes and Broth: Pour in the canned tomatoes with their juices and add the vegetable broth. Stir everything together and bring to a simmer. If you're using sugar to cut the acidity, add it now along with salt and black pepper.

      Simmer the Soup: Reduce the heat to low and let the soup simmer for about 20-25 minutes, allowing the flavors to meld and the vegetables to soften completely.

        Blend the Mixture: Using an immersion blender, carefully puree the soup until smooth. Alternatively, carefully transfer the mixture in batches to a blender—just be cautious as it will be hot.

          Finish with Cream and Basil: Return the blended soup to the pot (if you used a blender). Stir in the heavy cream and fresh basil. Let the soup warm over low heat for an additional 5 minutes. If desired, add balsamic vinegar for an added depth of flavor. Adjust seasoning if necessary.
